Healthy Oatmeal & Fig Muffins

Ingredients

  • 175ml (3/4 cup) all-purpose flour
  • 125ml (1/2 cup) whole-wheat flour
  • 125ml (1/2 cup) rolled oats
  • 60ml (1/4 cup) firmly packed sugar
  • 7ml (1-1/2 tsp) salt
  • 1ml (1/8 tsp) cinnamon
  • 125ml (1/2 cup) dried figs, chopped
  • 125ml walnuts, lightly roasted and finely chopped
  • 125ml (1/2 cup) 1% milk
  • 60ml (1/4 cup) Canola oil
  • 1 large egg, lightly beaten

Makes 12 yummy, delicious muffins!Big Smile

Preparation

  1. preheat oven to 400 F.  Put 12 medium paper baking cups in a muffin pan.
  2. In a medium bowl, combine the all-purpose and whole-wheat flours, oats, brown sugar, baking powder, salt, cinnamon, figs and walnuts
  3. In a small bowl, whisk together the yogurt, milk, oil and egg.
  4. Add the yougurt mixture to the dry ingredients and gently blend to form a soft dough.  Spoon the mixture evenly into the 12 muffin cups.  bake for 25-30 minutes.

Sit back, indulge and enjoy.
