Healthy Oatmeal & Fig Muffins
Ingredients
175ml (3/4 cup) all-purpose flour
125ml (1/2 cup) whole-wheat flour
125ml (1/2 cup) rolled oats
60ml (1/4 cup) firmly packed sugar
7ml (1-1/2 tsp) salt
1ml (1/8 tsp) cinnamon
125ml (1/2 cup) dried figs, chopped
125ml walnuts, lightly roasted and finely chopped
125ml (1/2 cup) 1% milk
60ml (1/4 cup) Canola oil
1 large egg, lightly beaten
Makes 12 yummy, delicious muffins!
Preparation
preheat oven to 400 F. Put 12 medium paper baking cups in a muffin pan.
In a medium bowl, combine the all-purpose and whole-wheat flours, oats, brown sugar, baking powder, salt, cinnamon, figs and walnuts
In a small bowl, whisk together the yogurt, milk, oil and egg.
Add the yougurt mixture to the dry ingredients and gently blend to form a soft dough. Spoon the mixture evenly into the 12 muffin cups. bake for 25-30 minutes.
